Hello and welcome to our blog! Each week we will be posting a new recipe for you to try. This week’s recipe is apricot meatballs which are a great way to get some much needed protein in your breakfast meal!
1 lb. ground turkey
2 garlic cloves, minced
1 cup fresh spinach leaves, chopped
¼ cup fresh basil, chopped
¼ cup dried apricots, finely diced
Sea salt and fresh ground black pepper to taste
Preheat oven to 400°F. Line a rimmed baking sheet with parchment paper.
Combine ground turkey, garlic cloves, spinach, basil, salt and pepper.
Add apricots to remaining ingredients and mix with hands.
Form mixture into 12 meatballs and place them on baking sheet.
Bake in oven at 325° for about 15 minutes or until cooked through.
